Cauliflower panna cotta with poached salmon

Ingredience

  • 1 Cauliflower
  • 500g Salmon fillet
  • 500ml Milk
  • 250ml Double cream
  • 4 Gelatine leaves
  • 5 Shallots
  • 50mg Butter
  • Salt and white pepper

Postup:

  1. Place cauliflower into pot and pour over cream and milk
  2. Cook it until cauliflower is soft
  3. Season with salt and white pepper
  4. Soak gelatine in the cold water
  5. Transfer cauliflower into blender and blend it until smooth
  6. Pass it thru fine sieve and add soaked gelatine
  7. Whisk until gelatine dissolved
  8. Put into ramekins or silicon mat and let it set in the fridge for 2-3 hours
  9. Meanwhile heat sauce pan with butter and caramelize shallots until light brown
  10. Season salmon with salt and cook in the steam for 8 minutes
  11. Carefully remove from pot and chill it
  12. Place panna cotta on the place and serve with caramelized shallots and poached salmon
